Freshly harvested olives arrive at our facility within hours of picking. Each batch is weighed, inspected and logged before entering the processing line.
Olives are thoroughly washed to remove leaves, debris and any impurities before entering the cold extraction process.
Two-phase centrifugal extraction below 27°C preserves all polyphenols, antioxidants and the distinctive character of the olive variety.
The oil is naturally decanted and then filtered for crystal clarity, removing any remaining water and sediment without affecting quality.
Every batch undergoes full chemical analysis — acidity, peroxide value, polyphenols, K232 and K270 — before release for bottling.
Oil is bottled in our automated line under strict hygiene protocols, sealed and labelled — ready to reach tables around the world.
Harvest timing is determined by precise monitoring of olive ripeness index. Only olives at optimal maturity are selected — never before, never after.
Temperature, processing time and centrifuge parameters are continuously monitored. Every deviation triggers immediate review and adjustment.
Acidity below 0.3%, polyphenol content, organoleptic evaluation — every batch receives a full certificate of analysis before release.
Fill level, seal integrity, label accuracy and batch traceability are verified on every single bottle leaving our facility.
Storage conditions, pallet integrity and shipping documentation are verified before every outbound shipment — domestic or international.
